There are any number of recipes for this fruit loaf known as brack in Ireland. The added ingredient tea gives a lovely flavour and distinguishes this tea cake from others. Traditionally made at halloween and consequently adopted as a part of American Haloween celebrations, this cake is lovely on any cold and damp afternoon.
Ingredients
1lb mixed fruit 7oz (250g) soft brown sugar 1/2 pint of cold tea 1 egg beaten 9oz (300g) self-raising flour
Method
1. Put the fruit, sugar and tea into a bowl and leave for 3 hours or until the tea is absorbed.
2. Beat in the egg and flour
3. pour into a lined and greased 2lb (1kg) loaf tin and bake in a pre-heated over, (180oC, 350oF) for 1 1/2 to 2 hours
4. Cool on a wire rack. Serve with butter. |
