You don't have to go to your local takeaway to enjoy the wonderful flavour of Chicken Tikka. This simple marinade recipe explains how simple it is to make. Good for a tasty tea for the kids or for a dinner party.
Serves 4
Ingredients
4oz (130g) natural low-fat yoghurt 1 tbsp fresh ginger finely grated 2 cloves garlic, crushed 1 tsp chilli powder 1 tsp ground coriander 1/2 tsp salt I lemon juiced 2 tbsp oil 4 chicken breasts, skinned and cubed 1 lettuce 1 red onion, peeled and sliced
Method
1. Mix together all but the last 3 ingredients
2. Sir the chicken into the marinade, coating well. Cover and refrigerate overnight.
3. When ready to cook, thread the pieces of chicken onto 6-8 skewers
4. Pre-heat grill to maximum temperature. Brush and remaining marinade over the meat and grill for 6-10 minutes, turning frequently.
5. Serve on a bed of lettuce leaves and onions, placing the chicken on top when cooked. |
