Lemon and mint are a refreshing combination and make a cooling picnic drink. It should be drunk within a few days.
Ingredients
3 large unwaxed lemons A generous handful of fresh mint leaves 2-3 tablespoons caster sugar 600ml (1 pint) boiling water
Method
Lightly crush the mint leaves and place in a heat proof bowl with the sugar. Scrub the lemons, slice roughly, then purée coarsely in a food processor.
Add this purée to themint and pour over the boiling water. Cover and set aside for 1–2 hours, until cool.
Strain through a nylon sieve into a jug. Serve with lemon slices, sprigs ofmint and ice cubes. |
